Historical note

The curriculum of institutional administration was first offered in 1922 and headed by Eda Lord Murphy. In 1924, the Department of Institutional Administration was established within Iowa State's Division of Home Economics and both undergraduate and graduate work was offered. It was renamed the Department of Institutional Management in 1931. By 1947 the Ph.D. degree was added as a joint major with departments in related fields. In 1983, the name Hotel, Restaurant and Institution Management (HRIM) was adopted. In 2001, this Department was combined with two others to form the Department of Apparel, Educational Studies and Hospitality Management (AESHM). This Department would become part of the College of Human Sciences when it was created by the merger of the College of Education and the College of Family and Consumer Sciences in 2005.

The goals of HRIM are to maintain excellence in foodservice and lodging education, research and outreach with a desire to develop leaders for the foodservice and lodging professions. Student coursework is planned to not only provide students with a general education but also provides preparation for supervisory and executive positions in hospitality organizations. There are also great efforts in research and extension with the purpose of improving the effectiveness and quality of management in lodging and foodservice organizations.

Collection description

This collection (1923-1990, undated) contains reports, guides, correspondence, photographs, committee files, curriculum materials, and publicity materials for the Department of Hotel, Restaurant and Institution Management. These records consist of general department files, food service technical institute files and workshop files.

The first series contains files regarding the Food Service Technical Institute. Included are guides for food preparation, service, and waste. There are also curriculum and course materials, committee papers, and program information.

The second series contains general files for the Department of Hotel, Restaurant and Institution Management. Included are records and photographs regarding cherry pies and other food sales during VEISHEA. There are also many photographs of departmental activities, annual equipment inventories, reports, and publicity files.

The third series contains the general files for the Department of Institution Management. Included are historical and informational files for the department which contain news clippings, photographs, brochures and informational handouts. There are also self studies, reports, and information on department events.

The fourth series contains the workshop files for the Department of Hotel, Restaurant and Institution Management. Included are materials regarding the national school lunch workshop such as reports, schedules, correspondence, programs, and evaluations. This series also contains workshop guides and a file on the naval training school at Iowa State for cooks and bakers during World War II.
