The curriculum of institutional administration was first offered in 1922 and headed by Eda Lord Murphy. In 1924, the Department of Institutional Administration was established within Iowa State's Division of Home Economics and both undergraduate and graduate work was offered. It was renamed the Department of Institutional Management in 1931. By 1947 the Ph.D. degree was added as a joint major with departments in related fields. In 1983, the name Hotel, Restaurant and Institution Management (HRIM) was adopted. In 2001, this Department was combined with two others to form the Department of Apparel, Educational Studies and Hospitality Management (AESHM). This Department would become part of the College of Human Sciences when it was created by the merger of the College of Education and the College of Family and Consumer Sciences in 2005. The goals of HRIM are to maintain excellence in foodservice and lodging education, research and outreach with a desire to develop leaders for the foodservice and lodging professions. Student coursework is planned to not only provide students with a general education but also provides preparation for supervisory and executive positions in hospitality organizations. There are also great efforts in research and extension with the purpose of improving the effectiveness and quality of management in lodging and foodservice organizations.
The Tea Room The Tea Room is a non-profit, learning laboratory that has been serving meals to faculty, staff and students since the late 1800s. It is supported by the Hotel, Restaurant and Institution Management Program and is operated entirely by students in the Quantity Food Production Management class. The purpose of the Tea Room Lab is to introduce students to the complexities and intricacies of producing a meal for between 70 and 100 people. The first three weeks of the course are set up as training; the students learn how to use tools in the kitchen and how to provide adequate costumer service as wait staff. By the end of the semester, a student will have been a server, host or hostess, cashier, kitchen staff member and kitchen manager. Eventually each student will plan a meal, procure all the ingredients, choose the place settings and make all other necessary preparations. The Tea Room was built in 1925 and has been remodeled four times, the most recent in 2002 in honor of Joan Bice and is now known as the Joan Bice Underwood Tea Room. |
This collection (1920-2012, undated) contains recipes, newsletters, news clippings, lab manuals and other course materials relating to the Department (now program) of Hotel, Restaurant and Institution Management Tea Room. Included are many laboratory manuals, worksheets and other course materials for HRIM 380 Quantity Food Production Management. This collection also contains newsletters, flyers and news clippings regarding events at the Tea Room. Also included are many recipe files. |
